Smoothies! Because you can't eat straight ice cream all the time...

Hey all,

Today, we bring you, not news or announcement, but a couple fun smoothie ideas. Yeah, it's cold outside (probably), but you can still mix some of these up, sip slowly, and pretend it's already summer. Here you go!

Strawberry Smoothie Ice Cream Soda

Ingredients:

1 pint (8 ounces) or 2 cups ripe strawberries, hulled and washed
2 cups ice cubes
4 ounces of simple syrup (see note)
1/2 cup thinly sliced strawberries
2 large scoops vegan Vanilla ice cream
2 large whole strawberries, for garnish

Preparation:

In a large capacity blender, put strawberries, ice cubes, simple syrup and blend until completely smooth, scraping down sides as necessary.

Divide smoothie between two 12-ounce soda glasses, layering sliced strawberries in the middle. Top with a big scoop of strawberry ice cream and serve with long spoons and a straw.

Note:

Simple syrup, unlike granulated sugar, dissolves instantly in liquid and can be made and stored, refrigerated, indefinitely. Mix 1 cup of sugar and 1/2 cup of water together in a saucepan and cook over medium heat, stirring until sugar dissolves. Boil for 2 minutes. Cool and store, covered, refrigerated. Makes 1 cup.


... Also, an alcoholic smoothie for adult-type parties. This one was a staff favorite on smoothie experimentation day.

Amaretto Iced Smoothie

(serves 1)

Ingredients:

1/2 oz amaretto
1/2 oz Kahlua
1 large scoop Wheeler's Black Label Espresso or Chocolate ice cream
6oz. espresso, chilled
Whipped "cream"
pinch of cocoa powder for garnish

Preparation:

Blend all ingredients in a blender (except whipped "cream"). Blend until smooth. Serve immediately. Top with whipped cream and dust top with cocoa powder.
